·        Add 200 ml of palm oil, crayfish, 1 cube seasoning, pepper, and salt to taste.

·        Allow for 3-4 minutes to simmer and this delicious soup is done.

Coconut Rice is a rice-made, savory side dish cooked in aromatic coconut milk. It’s so rich, luscious, and bursting with coconut aromatic flavors. You’ll be surprised that this simple Rice recipe has so much flavor.

It is no exaggeration to say that in an average Nigerian home, rice is eaten at least two to three times a week. We manufacture rice recipes such as jollof rice, fried rice, rice and beans, native jollof rice, and many more recipes for rice. We eat rice for breakfast, lunch, and dinner, with snacks sometimes.

In most Nigerian homes coconut rice is a staple. The way we make that differ from home to home, though. I adapted the delicious recipe for my moms and, as usual, I added my own spin using the chicken thighs instead of a whole chicken. The broth from the chicken’s dark meat gives the coconut rice more flavor.

I used crayfish in my own recycling as well. Only a small amount of crayfish provides the rice with a rich flavor. If you don’t have crayfish, don’t let the recipe stop you from making it. You can get away with it.

This coconut rice is not only delicious, it can be addictive too. The habaneros also have quite a kick. Not to worry, using fewer habaneros or simply removing the seeds can easily control the heat. That will reduce the amount of heat. Even Jalapenos can be used instead of Habaneros.

I always love using the full-fat coconut milk in my coconut rice for that rich coconut flavor but I know some people like it light; so feel free to use the light coconut milk for a milder coconut flavor but it’s so much better! And if you’re really looking for coconut, you can garnish with toasted coconut flakes lightly!!

Important points to note

  • Make sure the rice is rinsed before cooking. This will help reduce the starch content in the rice.
  • Cook the rice over low heat to prevent it from burning
  • For this recipe, the can coconut milk works best, not those in the cold milk section.
  • I used basmati rice for this recipe, however, you can use any kind of rice you like but note that cooking time varies with different types of rice.

Ingredients For coconut rice with chicken

  • 5 pounds of Chicken quarters cut into small bite-size
  • 2 scotch bonnets of Ata Rodo
  • 1 Tsp of Thyme
  • 1 Tsp of Curry powder
  • 1 Cube of seasoning
  • Bay leaf
  • 1 bulb of Onion Diced
  • 3 Cups of Rice
  • 2 Cups of Coconut Milk
  • 2 Cups of Chicken Stock From the Boiled Chicken
  • 1 cup of Green bell pepper diced.
  • 2 Tablespoons of crayfish which is optional
  • 2 Tablespoons of Coconut Oil or any other cooking Oil

Directions for preparing coconut rice with chicken

  • Cut the chicken into tiny portions, rinse, and inside the pot.
  • Season with salt, a cube of stock, thyme, curry powder. Attach the pepper of Onions and Habanero, and leaf of Bay. Then remove the chicken from the stock and set aside, stir, cover, and cook for 15 minutes.
  • Preheat the coconut oil in a clean pot, add the onion and fry until the ointments become translucent. Do this over medium heat for around 2 to 3 minutes. Add the milk of coconut, stock of chicken, crayfish, and peppers of habanero and let it boil.
  • Add the rice washed and drained, and leave for 15 minutes to cook. Quickly throw in the shrimps, chicken, and green bell peppers.
  • Immediately cover it up and let it cook for another 10 minutes at low heat.
  • Turn off the heat and leave for 5 minutes before opening the lid to steam. Swirl. Swirl. Serve, and have fun!

Resistance to antibiotics has resulted in the majority of producers in some countries launching programs to reduce and eliminate the use of antibiotics, where possible.

The trend is similar in South Africa although not to the same extent as in the US and some European countries.

However, reducing the use of antibiotics could lead to a higher incidence of diseases such as coccidiosis and necrotic enteritis that had previously been kept in check by the use of antimicrobials or other products and this, in turn, could lead to animal welfare problems if not properly managed.

For this reason, farmers should employ a veterinarian’s services to ensure a smooth transition to a regime where antibiotics are only reserved as a last resort when the flock faces a serious threat.

However, when antibiotics are used in such circumstances, products from such flocks cannot be marketed as non-antibiotic.

The programme that takes into account the unique circumstances of the farm, as well as the burden of disease, should be well thought out.

What does it really take to start raising backyard chickens?

Should families consider free-range farming? should they change their opinion about only rearing chickens for subsistence purposes?

Many communal farmers do not realize their farm chickens’ commercial value and as such, families generally keep these birds for subsistence purposes only.

The same applies to smallholder farmers who believe that the only way to run a viable chicken farming business is to farm the traditional white broiler chickens which rely solely on bagged feed purchased.

Chicken growers, and finisher meals are not only becoming very expensive, but free-range chickens are healthier, and the meat and eggs produced for human consumption are comparatively healthier.

If you can grow your own cheap feed, the fact that free-range chickens that take longer than five to six weeks to be ready for market is of no consequence.

Interestingly, the demand for live indigenous or Nguni-type birds is rising, rather than for white broilers. It is easier to market live chickens than to transport livestock such as ovine and cattle.

An additional bonus to farming chickens is that they grow faster in number than other livestock. Free-range hens can be prolific breeders, and flocks of 10 or even more are not infrequent.

Simple, affordable Nursery can be used

One problem with raising free-range chickens is that predators such as hawks or vermin such as rats can take young chicks.

However, a nursery can be made for very young chicks from cheap materials such as chicken wire mesh, 2.4 m long wooden droppers which are used in-game farm fences and are available in most farmer supply stores

Alongside inexpensive timber slats which are available in most sawmills or hardware shops, and reinforcing mesh used in building foundations also available at construction material supply companies.

Here’s how to build a nursery

Cut the 6 m metal mesh sheets in half length; this gives a fence height of 1,2 m, since the sheets are 2,4 m wide; and a mesh length of 12 m to construct an enclosure.

If you need to increase the size of the enclosure add more mesh sheets. The reinforcing mesh offers ground-level support for the structure and prevents predators from biting through.

Sink the 600 mm droppers into the ground. This will ensure you have 1,8m-high, stable supports.

To build a frame, attach the timber slats to the droppers, and secure the chicken mesh tightly against the mesh and timber frame reinforcing steel.

The droppers and slats can be treated with an oil-based product like Waksol timber, linseed oil, or creosote, all available in hardware stores. Alternatively, at the start of summer, paint all timber, and droppers annually with three coats of old motor oil.

Do this, even if the timber slats and droppers are treated because they protect the wood from the elements. Paint a rust protection paint on the reinforcing mesh at most hardware stores.

Creating a shelter for the chickens

Easy individual shelters made from corrugated zinc can be mounted on the enclosures. Put an old car tire, loaded with grass cuttings or straw oats, under each.

The hens, which with the breeding roosters forage throughout the day, may lay eggs in those enclosures.

Create fence openings to allow them to leave the enclosure to forage in the surrounding garden area or farmyard, and return to the eggs afterward.

These exit spaces should be approximately square in shape, about the size of two shoebox lids, and from the ground 10 cm to 15 cm away. This prevents very young chicks from getting out of their nursery enclosure.

The chicks can be fed a little grower mash and even finely chopped greens such as Lucerne when mother hens are out foraging. This will last at most for about a week; after that, the chicks will join the adults in foraging.

Trust me, you can find near you the majority of the herbs you‘ll need. Yet that isn’t to suggest they’re all waiting at your doorstep. My advice is to buy large quantities of herbs that aren’t found near you.

Nigerian Fried Rice is a basic but tasty recipe. This version relies on chicken broth and beef Liver, a lot of fresh vegetables, and a little bit of oil to crisp it up.

The added beef liver and chicken broth give a very nice rich but subtle taste to the fried rice and this is why it is one of Nigeria’s most common options.

Like the Basmati Jollof Rice, we savor these meals so much, and in gatherings and festive seasons we can barely do without them, and it is a meal that you can make in no time. So simple recipe but it’s quite remarkable the impact it makes in a gathering!

This recipe starts with Rice that has already been parboiled, making the whole process easier. If you haven’t parboiled rice already, you can see how this is done here. Using a day-old Rice that has been refrigerated is also okay, it’s very convenient and the result is just as good.

In a bit of well-seasoned stock, I also cooked this parboiled rice so that the rice could absorb more flavor. But, while this is recommended, this move can be skipped in case you are in a rush.

For this recipe, you can either use freshly cooked rice (parboiled) or the residual cold rice. If you chose to use freshly cooked rice, make sure that you select the appropriate Rice type. I like using the Rice parboiled long grain.

When making Fried Rice likewise, Jollof Rice, this type of rice is very easy to work with, because it’s firmer and less sticky, making it very difficult to go wrong when working with.

Before adding it to the pan the rice should be cool to the touch. If you are short of time, simply spread the rice over a sheet pan to allow the steam to escape easily or simply put the cooked rice in the fridge for a few minutes.

Finally, it’s important to always wash the rice before you cook.

This will help to remove the rice’s excess starch which can cause the rice to clump together.

Worthy notes on how to prepare Nigerian fried rice

  • If you like some spice, it is ok to add a dash of cayenne pepper!
  • Before you fry, don’t over boil your Rice, otherwise you’ll end up with a soggy Fried Rice.
  • While the Veggies remain crunchy, Fried Rice is best enjoyed so don’t overcook your veggies.
  • I used carrots, sweet peas, sweet corn, and green beans mixed veggies. Nevertheless, it is also possible to use vegetables such as sweet bell peppers.
  • To achieve that pleasant coveted crisp, during the frying process you’ll need to turn the heat up to high and stir continuously as you allow the rice to heat up.
  • I’ve added pieces of beef liver to my fried rice, a lot of people like this too, but if you don’t want it you ‘re free to leave it out, you’ll still enjoy the Fried Rice ‘s total goodness.

  • Attach the parboiled rice to the stock and cook until dry.
  • Preheat the oil in a saucepan, add the scallions, mixed vegetables, and seasonings (Thyme, Curry Powder, Salt, and Stock Cube) and fry for a minute or two.
  • Put in the rice for around 3 to 5 minutes and stir-fry. Remove from heat, and serve

The process of molting or moulting is when chickens naturally shed old feathers to regrow new ones. In poultry production molting isn’t a strange thing. That all chickens go through every year is a natural process. The motive for it is quite easy. Firstly, to remove or replenish their feathers, chickens mold, or moult. Chickens need to grow new feathers because it allows them to easily and efficiently regulate their body temperature, especially in colder regions.
